Ingredients

  • 1 lb chicken breast (boneless, skinless)
  • 1 cup brown rice (uncooked)
  • 1 cup black beans (canned, rinsed)
  • 2 cups chicken broth (low sodium)
  • 1 bell pepper (diced)
  • 1 onion (chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine uncooked brown rice, black beans, chicken broth, diced bell pepper, chopped onion, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Place the chicken breasts on top of the rice mixture and drizzle with olive oil.
  5. Cover the dish with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 5 minutes, until chicken is cooked through.
