Ingredients
- 1 lb chicken breast (boneless, skinless)
- 1 cup brown rice (uncooked)
- 1 cup black beans (canned, rinsed)
- 2 cups chicken broth (low sodium)
- 1 bell pepper (diced)
- 1 onion (chopped)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine uncooked brown rice, black beans, chicken broth, diced bell pepper, chopped onion, garlic powder, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Place the chicken breasts on top of the rice mixture and drizzle with olive oil.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes, until chicken is cooked through.
