Ingredients

  • 1 cup cooked brown rice
  • 1/2 cup canned black beans (rinsed and drained)
  • 1 medium carrots (finely chopped)
  • 1 tablespoon olive oil
  • 1/2 cup vegetable broth
  • to taste salt
  • to taste pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped carrots and sauté until tender.
  3. Add black beans and vegetable broth to the pan.
  4. Simmer for 5 minutes, allowing flavors to meld.
