Ingredients

  • 1 cup brown rice (Rinsed)
  • 1 can 15 oz black beans (Rinsed and drained)
  • 2 medium carrots (Grated)
  • 2 cups vegetable broth (Low sodium)
  • 1 tablespoon olive oil (For cooking)
  • to taste salt (Optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add grated carrots and sauté for 5 minutes until soft.
  3. Stir in the rinsed rice and sauté for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  6. Stir in the black beans and heat through for 5 minutes.
  7. Serve warm.
