Carrot and Bean Rice Bowl

Ingredients
- 1 cup brown rice (Rinsed)
- 1 can 15 oz black beans (Rinsed and drained)
- 2 medium carrots (Grated)
- 2 cups vegetable broth (Low sodium)
- 1 tablespoon olive oil (For cooking)
- to taste salt (Optional)
Instructions
- Heat olive oil in a pot over medium heat.
- Add grated carrots and sauté for 5 minutes until soft.
- Stir in the rinsed rice and sauté for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Stir in the black beans and heat through for 5 minutes.
- Serve warm.
