Ingredients

  • 1 cup cooked chicken breast (shredded)
  • 2 cups cooked rice (preferably brown rice)
  • 2 large egg (beaten)
  • 1/2 cup peas
  • 1/2 cup diced carrots
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced carrots and peas, sauté until tender, about 3-4 minutes.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side.
  4. Scramble the eggs until fully cooked, then mix with the vegetables.
  5. Add the cooked chicken and rice, stir well to combine.
  6. Pour in the soy sauce and stir until everything is evenly coated and heated through.
