Ingredients
- 1 cup cooked chicken breast (shredded)
- 2 cups cooked rice (preferably brown rice)
- 2 large egg (beaten)
- 1/2 cup peas
- 1/2 cup diced carrots
- 2 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced carrots and peas, sauté until tender, about 3-4 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side.
- Scramble the eggs until fully cooked, then mix with the vegetables.
- Add the cooked chicken and rice, stir well to combine.
- Pour in the soy sauce and stir until everything is evenly coated and heated through.
