Ingredients

  • 1 cup brown rice (cooked)
  • 1 cup spinach (fresh, chopped)
  • 1 medium carrot (grated)
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a pan, heat the olive oil over medium heat.
  3. Add the grated carrot and sauté for 2-3 minutes until softened.
  4. Add the chopped spinach and cook until wilted, about 2 minutes.
  5. Combine the cooked rice with the spinach and carrot mixture, stirring well.
  6. Season with salt and pepper to taste.
