Ingredients
- 1/2 cup brown rice (uncooked)
- 2 cups spinach (fresh, chopped)
- 1 medium carrot (diced)
- 4 cups vegetable broth
- 1 tablespoon olive oil
- to taste salt
- to taste pepper
Instructions
- In a pot, heat olive oil over medium heat.
- Add diced carrot and sauté for 3-4 minutes until tender.
- Add the vegetable broth and bring to a boil.
- Stir in the brown rice and reduce heat, simmering for about 20 minutes.
- Once rice is cooked, add the chopped spinach and cook for another 2-3 minutes.
- Season with salt and pepper to taste before serving.
