Ingredients

  • 1/2 cup brown rice (uncooked)
  • 2 cups spinach (fresh, chopped)
  • 1 medium carrot (diced)
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Add diced carrot and sauté for 3-4 minutes until tender.
  3. Add the vegetable broth and bring to a boil.
  4. Stir in the brown rice and reduce heat, simmering for about 20 minutes.
  5. Once rice is cooked, add the chopped spinach and cook for another 2-3 minutes.
  6. Season with salt and pepper to taste before serving.
